Toscana Soup (the Aw Shit way)
This soup is so easy to make and has a killer taste to be so simple. Grab a bottle of good Chianti, grate some Parmesan cheese on top and Jeez-o-Pete, you’ve got some of the best eating anywhere.
Ingredients :
- 1lb ground Italian sausage – don’t go cheap here, look for real Italian sausage. Get the link sausage and take it out of the casing if you have to
- 1½ tsp crushed red peppers
- 2 tsp Aw Shit
- 1 large diced white onion
- 4 Tbsp bacon pieces
- 2 tsp garlic puree
- 10 cups chicken broth
- 1 cup heavy cream
- 1 lb sliced Russet potatoes, or about 3 large potatoes
- ¼ of a bunch of kale
- grated Parmesan cheese
Preparation:
- Sauté Italian sausage and crushed red pepper in a large pot. Drain excess fat, refrigerate while you prepare other ingredients.
- In the same pan, sauté bacon, onions and garlic for approximately 15 mins. or until the onions are soft.
- Add chicken broth to the onions, bacon and garlic. Cook until boiling.
- Add potatoes and Aw Shit and cook until soft, about half an hour.
- Add heavy cream and cook until thoroughly heated.
- Stir in the sausage.
- Add kale just before serving. Cover with Parmesan cheese and wow, Delicious!
