Fire It Up!

May is when the grills come out of hibernation and suddenly everybody becomes a backyard cooking expert again. One warm weekend and folks are out there flipping burgers in cargo shorts like they’re competing for a trophy nobody asked for. And honestly? We respect it. This is the time of year for smoky chicken, charred veggies, burgers dripping down your wrist, and potato salad showing up at every gathering whether you invited it or not.

The good news is, great barbecue doesn’t have to be complicated. A little fire, a cold drink, and enough seasoning to make people wander over asking, “What smells so good?” is really the whole formula. Whether you’re cooking for the neighborhood, the family, or just yourself on a Tuesday night, May’s a good reminder to get outside and make something worth eating. Preferably something with a little SpecialShit on it.

Recipe:

Grilled Pork Skewers with Pineapple

Sweet, smoky, a little sticky, and simple enough that nobody gets stuck in the kitchen while everybody else is outside having fun.

Ingredients

* 2 lbs pork tenderloin, cut into 1½-inch cubes

* 3 cups fresh pineapple chunks

* 1 red bell pepper, chopped into large pieces

* 1 red onion, chopped into large pieces

* 2 Tbsp olive oil

* 2 Tbsp GoodShit

* Wooden or metal skewers

Optional Glaze

* 2 Tbsp honey

* 1 tsp Dijon mustard

* Small squeeze of lime juice

Preparation

1. Preheat grill to medium-high heat.

2. In a large bowl, toss pork with olive oil, and GoodShit until evenly coated.

3. Thread pork, pineapple, pepper, and onion onto skewers.

4. If using the glaze, stir ingredients together in a small bowl.

5. Grill skewers for about 10–12 minutes total, turning every few minutes until pork is cooked through and lightly charred.

6. During the last couple minutes of grilling, brush with glaze if desired.

7. Let rest a few minutes before serving.
