January has a reputation for being a little… bland. New routines, cleaner slates, fewer indulgences. But here’s the thing: starting fresh doesn’t mean stripping all the joy out of your food. It just means paying attention again: to what you cook, who you cook for, and why it matters. Whether you’re easing back into weeknight dinners or trying to feel a bit more put-together after the holidays, flavor is still allowed (encouraged, actually).

This month, we’re all about simple wins. A pot of soup that actually tastes like something. Roasted veggies that don’t feel like a punishment. Meals that make you think, “Yeah, this is a good way to start the year.” You don’t need a total overhaul, just a few solid ingredients and the willingness to make January a little less boring. Recipe:

Sheet-Pan ChickenShit Chicken with Cabbage & Apples

Lean protein, lots of veg, and just enough natural sweetness from apples to make it interesting. It’s cozy and warm for these cold winter months.

Ingredients

* 1 1/2–2 lb boneless, skinless chicken breast, sliced lengthwise into cutlets

* 1 small head green cabbage, cut into thick wedges

* 2 apples (Honeycrisp or Fuji work great), sliced

* 1 small red onion, sliced

* 3 Tbsp olive oil, divided

* 1 1/2-2 Tbsp ChickenShit (to taste)

* Optional: a splash of apple cider vinegar or lemon juice for finishing

Preparation

1. Preheat oven to 425°F and line a sheet pan with parchment.

2. Toss cabbage, apples, and red onion with about 2 tbsp olive oil and 1/2–1 Tbsp ChickenShit. Spread evenly on the sheet pan.

3. Roast veggies for 15 minutes to give them a head start. While they roast, rub chicken cutlets with remaining olive oil and ChickenShit.

4. Pull the pan out, nestle the chicken in among the veggies, and return to the oven.

5. Roast for another 15–18 minutes, until chicken is cooked through and veggies are tender with crispy edges.

6. Finish with a light splash of apple cider vinegar or lemon juice if you like a little brightness.
