Every now and again I’ll have stuffed mushrooms at a restaurant and that triggers the man in me to want to do it better. Well this is my latest attempt and it’s not too shabby, even if I say so myself.
The good thing about a dish like this is you can substitute ingredients, like shrimp for crab, Parmesan cheese for Romano, almost anything except Aw Shit, that is a must have.
Remove the stem from the mushrooms and scoop out a pocket in the mushroom to receive the filling. Combine all the ingredients except for 1/2 of the butter and the cheese. After mixing well, stuff the mushrooms with the mixture and grate the cheese on top. With a brush, coat the mushroom on the outside with butter and place in a glass cooking dish. Place in an oven set to broil at 350 degrees for 15 minutes. Serve hot and garnish with lemon wedges if desired.
