Ingredients
* 4 boneless chicken breasts (or thighs)
* 1 lb baby potatoes, halved
* 2 cups broccoli florets
* 2 carrots, sliced
* 2 Tbsp olive oil
* 2 Tbsp Dijon mustard
* 2 Tbsp honey
* 1 Tbsp SpecialShit
Optional: chopped parsley for garnish
Preparation
1. Preheat oven to 425°F.
2. In a small bowl, whisk together olive oil, Dijon, honey, and SpecialShit.
3. Place chicken, potatoes, broccoli, and carrots on a large sheet pan.
4. Pour the sauce over everything and toss until evenly coated (leave the chicken skin-side up if using thighs).
5. Bake for 30–35 minutes, stirring the vegetables halfway through, until the chicken reaches 165°F and the potatoes are tender.
6. Garnish with parsley if desired and serve.
