Not-So-Shitty Fajitas
Who doesn’t like fajitas? I mean, really: they have all the food groups, they’re customizable, and come in a convenient hand-held size! Not to mention the fact that they are just delicious (especially the ones from this recipe).
Ingredients :
- 1 Tbsp AwShit
- 1 Tbsp SpecialShit
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- 1/4 cup olive oil
- Juice of 1 lime
- 2 Tbsp water
- 1 1/2 pounds skirt steak or boneless skinless chicken breasts
- 1 medium bell pepper, cut in thin strips
- 1 medium onion, thinly sliced
- 8 flour tortillas (burrito-size)
Preparation:
- In a small bowl, mix the olive oil, lime juice, water, AwShit, SpecialShit, and the other dry seasonings. Reserve 2 Tbsp of this mixture for basting and set it aside. Pour the rest of the mixture into a large resealable bag or a glass dish. Add the meat and make sure it’s well-coated.
- Refrigerate 15 minutes or longer for extra flavor. Remove meat and vegetables from marinade. Discard any remaining marinade.
- For steak, broil or grill over medium heat 6 to 8 minutes per side or until desired doneness. For chicken, broil or grill over medium heat 6 to 7 minutes per side or until chicken is cooked through. Baste occasionally.
- Place vegetables in heated skillet or grill pan. Sauté vegetables over medium-high heat until tender.
- Cut meat across the grain into thin slices. Spoon meat and vegetables into warm tortillas. Serve with cheese, salsa, guac, tomatoes… you name it!
