Grilled Pork Skewers with Pineapple

Sweet, smoky, a little sticky, and simple enough that nobody gets stuck in the kitchen while everybody else is outside having fun.

 

Ingredients

 

* 2 lbs pork tenderloin, cut into 1½-inch cubes

* 3 cups fresh pineapple chunks

* 1 red bell pepper, chopped into large pieces

* 1 red onion, chopped into large pieces

* 2 Tbsp olive oil

* 2 Tbsp GoodShit

* Wooden or metal skewers

 

Optional Glaze

 

* 2 Tbsp honey

* 1 tsp Dijon mustard

* Small squeeze of lime juice

 

Preparation

 

  1. Preheat grill to medium-high heat.
  2. In a large bowl, toss pork with olive oil, and GoodShit until evenly coated.
  3. Thread pork, pineapple, pepper, and onion onto skewers.
  4. If using the glaze, stir ingredients together in a small bowl.
  5. Grill skewers for about 10–12 minutes total, turning every few minutes until pork is cooked through and lightly charred.
  6. During the last couple minutes of grilling, brush with glaze if desired.

7. Let rest a few minutes before serving.
