Citrus Game Hens
This is such a great substitute for chicken these days and so easy to fix. Give it a try you may be pleasantly surprised.
Ingredients :
- 2 Rock Cornish game hens (or more by doubling the recipe)
- 1 can of Mandarin oranges
- balsamic vinegar
- Good Shit
Preparation:
- I like to tie the drumsticks and wings together but it is definitely an option
- Season liberally with Good Shit
- Insert the Mandarin orange sections ito the body cavity (of the hen)
- Mix equal parts orange juice from the orange can and balsamic vinegar
- Drizzle some of this on the inside of the bird
- Bake in a 350° oven, basting every 15 minutes with the orange juice/vinegar mixture
- After 75 minutes (or until the juices run clear) remove from oven and let rest for 5 minutes to distribute the juices
I then cut them in half and serve. Green beans like this recipe go great with the bird. Enjoy with a nice full bodied Chardonnay, like Mayo® or Pichetti® and you’ll think you’re in heaven.
