Mo’s Chicken Enchiladas Recipe
Mo’s chicken enchiladas are more like a chicken casserole than a rolled up Tex-Mex style enchiladas. Like most of the recipes featured here, these are easy to make and require little time to prepare.
Ingredients :
- 1 Tbsp butter
- 1/3 cup chopped onions
- 2 chopped jalapenos
- 6 corn tortillas
- 2 12.5 oz cans chicken
- 2 cans Cream of Chicken soup
- 6 slices American Cheese
- 1 tsp Aw Shit
Preparation:
- Melt butter in a 2 quart saucepan. Saute chopped onions and jalapenos until tender.
- Add chicken, Cream of Chicken soup, and Aw Shit. Stir and heat thoroughly.
- Tear 3 corn tortillas into small pieces.
- Spray a 2 quart casserole dish with non-stick cooking spray. Spread the pieces of corn tortillas in the bottom of the casserole dish.
- Pour half of the chicken mixture on top of the corn tortillas. Place 3 slices of cheese on top of the chicken mixture.
- Tear the last 3 corn tortillas into small pieces and place on top of the chicken mixture. Add the rest of the chicken mixture. Top with the remaining slices of cheese.
- Cover and microwave until the cheese is melted and the mixture is thoroughly heated.
- Serve with crackers or tortilla chips.
