BBQ Chicken Recipe
There are two kinds of BBQ Chicken. There’s the kind where you cook it on a “pit” for several hours while applying a SOP (recipe here) every half hour or so. This is usually what you get at a BBQ Restaurant. This recipe is for the other kind, which can easily be made at home with a small charcoal or gas grill.
Preparation :
- Season liberally with Special Shit or Good Shit (Good Shit is a little sweeter than Special).
- Put the coals (or turn the gas) on one side of the grill.
- Place the chicken on the other side of grill and keep the temperature moderate.
- Every 20 minutes or so flip the bird and check the temperature by placing your hands above the coals (if it leaves burned skin on your hand it’s too hot).
- Depending on the size of the chicken and the hotness of your grill this could take up to a couple of hours.
- After the bird is done, slather BBQ Shit on one side. Cover the grill for 5-10 minutes. Flip the chicken and slather the other side. Cover the grill for another 5-10 minutes.
- Remove from grill and let rest for 5-10 minutes. Enjoy!
