ChickenShit Grilled Chicken Salad
This flavorful grilled chicken salad is perfect for a light yet satisfying lunch. ChickenShit adds a bold kick to the juicy grilled chicken, perfectly complementing the fresh veggies and zesty dressing.
Ingredients :
Chicken
- 2 boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1 ½ tsp ChickenShit
- 1 tsp lemon juice
Salad
- 4 cups mixed greens (romaine, spinach, arugula, or your favorite mix)
- ½ cup cherry tomatoes, halved
- ½ cup cucumber, sliced
- ¼ cup red onion, thinly sliced
- ¼ cup feta cheese, crumbled (optional)
- ¼ cup toasted pecans or almonds
- ½ avocado, sliced
Dressing
- 3 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp Dijon mustard
- ½ tsp honey
- Salt and pepper to taste
Preparation
- Preheat the grill to medium-high heat (or use a stovetop grill pan). In a small bowl, mix the olive oil, ChickenShit, and lemon juice. Rub the seasoning mixture evenly over both sides of the chicken breasts. Grill for 5-7 minutes per side, or until the internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes before slicing.
- In a small bowl or jar, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and nuts. Slice the grilled chicken and place it on top of the salad. Add the avocado slices. Drizzle with the dressing and toss gently to combine.
- Serve immediately, with extra dressing on the side if desired.
