This is not your basic kebab. Bright, a little smoky, a little fancy, but still built for a backyard grill and a cold drink.
Ingredients
* 1.5–2 lbs boneless, skinless chicken thighs (cut into large chunks)
* 2–3 Tbsp olive oil
* 1.5 tbsp ChickenShit seasoning
* zest + juice of 1 lemon
* 1 Tbsp honey
* 3 cloves garlic, minced
* Red onion (chunked)
* Bell peppers (any color, big pieces)
* Zucchini (thick slices)
* Optional: mushrooms or pineapple
* 1/2 cup plain Greek yogurt
* 2 Tbsp fresh herbs (parsley, cilantro, or dill)
* 1 Tbsp lemon juice
* 1 Tbsp olive oil
* Pinch of ChickenShit
Instructions
1. In a bowl, mix olive oil, ChickenShit, lemon zest/juice, honey, and garlic. Toss in the chicken and coat well. Let it sit at least 30 minutes (longer = better, up to overnight).
2. Thread chicken and veggies onto skewers, alternating for color and even cooking. Pack them tight, but not suffocating.
3. Medium-high heat, about 10–12 minutes total, turning occasionally until the chicken gets that nice char and is cooked through.
4. Stir together the yogurt, herbs, lemon juice, olive oil, and a pinch of ChickenShit. Taste it and adjust if needed. This is your secret weapon.
5. Lay the skewers on a platter and drizzle with the sauce.
